Beyond Meatballs
These are great. I served them with potato/carrot mash
Ingredients
- 3 packages of beyond meat
- 1 bunch scallions
- 1/2 cup ketchup
- 1 cup panko breadcrumbs
- 1 tbs Worcestershire sauce
- Salt & Pepper
- 2 bags baby carrots
- 2 lbs potatoes (chopped)
- 4 tbs vegan butter
- 1/4 cup oat milk
- 1 tbs better than bullion
Process
Preheat oven to 400 degrees
Chop scallions well.
Mix beyond meat, scallions, ketchup, breadcrumbs, Worcestershire sauce, salt and pepper
Roll into balls on a baking sheet (I needed 3) and bake for 20 minutes
For the puree, put carrots and potatoes in the instapot and cover with bullion broth (3/4 cup).
Cook for 5 minutes and allow to release naturally
Add vegan butter oat milk and use an immersion blender to puree.
Add salt and pepper to taste
