Beyond Meatballs

These are great. I served them with potato/carrot mash

Ingredients

  • 3 packages of beyond meat
  • 1 bunch scallions
  • 1/2 cup ketchup
  • 1 cup panko breadcrumbs
  • 1 tbs Worcestershire sauce
  • Salt & Pepper
  • 2 bags baby carrots
  • 2 lbs potatoes (chopped)
  • 4 tbs vegan butter
  • 1/4 cup oat milk
  • 1 tbs better than bullion

Process

  1. Preheat oven to 400 degrees

  2. Chop scallions well.

  3. Mix beyond meat, scallions, ketchup, breadcrumbs, Worcestershire sauce, salt and pepper

  4. Roll into balls on a baking sheet (I needed 3) and bake for 20 minutes

  5. For the puree, put carrots and potatoes in the instapot and cover with bullion broth (3/4 cup).

  6. Cook for 5 minutes and allow to release naturally

  7. Add vegan butter oat milk and use an immersion blender to puree.

  8. Add salt and pepper to taste
