Hanukkah fell on New Year's this year, so we had a pretty awesome Hanukkah party. We had nine people, so it was pretty important to have enough latkes. Unfortunately, as you can see from the picture, we may have over prepared on the potato front. Here's what I would recommend for 9 people worth of latkes for your next Hanukkah shindig.

Ingredients
- 5 lbs potatoes
- 1 large yellow onion
- 6 tbs flour
- 6 eggs (beaten)
- Salt and pepper
- Oil for frying
Procedure
Preheat oven to 200 degrees.
Peel the potatoes and onion. Use a food processor to shred the potatoes and onion. Put a colander in a bowl and line the colander with cheese cloth. Place the potato and onion shreds in the colander and squeeze out moisture. Allow the potato mixture to drain for 10-15 minutes.
Once the potatoes have dried out a bit, place them in a large bowl and add the flour, eggs, and salt and pepper to taste. Combine all ingredients.
Prepare a frying pan with about 1/2 inch of oil. Make a 1 inch ball of potato mixture, flatten it, and place in oil. Fry the latkes until they are brown on both sides.
Once the latkes are cooked, place on a cookie sheet with a drying rack on top and covered in paper towels. Keep latkes in the oven to keep warm until serving.
