Happy Eggnog season! Whatever solstice celebration you're observing, most people can get behind eggnog. I actually didn't like eggnog for a long time because I thought it was too powerful. However, I have come to really enjoy it in recipes - like this french toast. I am not sure what makes this tasty - the eggnog or cardamon, but Elliott said that it reminded him of a cinnabon (albeit with about 30% of the calories) and that he would pay a lot of money for it in a restaurant.
We thought it was really tasty with apple butter.
Recipe
Ingredients
- 1 loaf challah bread
- 2/3 cup milk
- 1/3 cup eggnog
- 4 eggs
- 1 tsp cardamon
- 1 tsp cinnamon
- 2 tbs sugar
- Butter or ideally coconut oil spray (see note)
Process
- Slice challah into ~1 in thick pieces
- Beat together milk, eggnog, and eggs with a fork.
- Stir in cardamon, cinnamon, and sugar
- Heat a large pan with some coconut oil spray over medium heat
- Dip challah in egg mixture, place in a pan and cook, flipping occasionally until light brown on each side. Be careful not to wait too long between flips or the toast might burn.
- Serve with butter, jam, or maple syrup.
Note I hadn't used coconut oil spray before but it was the same price as regular oil spray at Trader Joe's and I find it works really well, has a great flavor, and seems to prevent things from burning/sticking, so I'd highly recommend it.
